Cinnamon Rolls


I'm trying this recipe today.  Everyone in the ward who has had these raves about how amazing they are.  I will let you know!  I usually do half white and half wheat flour when I make cinnamon rolls.

Daddy’s Famous Cinnabon Rolls
Ingredients:
·      Rolls:
·      1/2 cup warm water (100-110° F)
·      2 packages dry yeast (1-1/2 tbsp.)
·      2 tbsp. sugar
·      3-1/2 oz. pkg. vanilla pudding mix
·      1/2 cup margarine -- melted
·      2 eggs
·      1 tsp. salt
·      6 cups flour
·      1 cup butter
·      2 cups brown sugar
·      2 tbsp. cinnamon
·      Cream Cheese Frosting:
·      8 oz cream cheese
·      1/2 cup margarine
·      1 tsp. vanilla
·      3 cups confectioner's sugar
·      1 tbsp. milk
Frosting Directions:
To make frosting, mix all ingredients until smooth.

Roll Directions:
In a bowl combine warm water, yeast and sugar. Stir until dissolved. Set aside.
In large bowl, take pudding mix and prepare according to package directions (Use warm milk to aid in rising). Add ½ cup melted margarine, eggs and salt. Mix well. Then add yeast mixture. Blend.
Gradually add flour; knead until smooth (may take more, or less than 6 cups, keep dough as tacky as you can work with it). Place in a greased bowl. Cover and let rise until doubled (~45 min).
Punch down dough and let rise again (~30 min).
Then roll out on floured board to 34 x 21" size. Take 1 cup soft butter and spread over surface. In bowl, mix 2 cups brown sugar and 2 tbls cinnamon. Sprinkle over top. Roll up very tightly.
With knife, put a notch every 2". Cut with thread or knife (dental floss works the best).
Place on lightly greased cookie sheet 2" apart.
Take hand and lightly press down on each roll.
Cover and let rise until double again (~25-30 min). Bake at 350 15-20 minutes. Remove when they start to turn golden.

Don't Over Bake.
Frost warm rolls with Cream Cheese Frosting
Serving Size: Makes about 20 very large rolls

That Good Salad

I made this salad to go with our Valentine's dinner last week. Nelson even liked this salad, a lot, and he doesn't like salad.

Super yummy. Use fresh lemons for the dressing, not the bottled juice.

Best Brownies

I made a few changes:
For the batter I added some milk chocolate chips (not necessary, I just like it that way).
For the frosting I used about 2/3 or 3/4 cup powdered sugar (this is less than the recipe called for) and I added about 1 to 1 1/2 tsp milk.

Honestly these are so good, and very rich. Yum, yum. I made them for book group, but liked them so much I decided they needed to stay home for my own family.

Baked Halibut Steaks

"An Italian-style vegetable and feta cheese topping is the perfect enhancement to delicious baked halibut."
INGREDIENTS:
1 teaspoon olive oil
1 cup diced zucchini
1/2 cup minced onion
1 clove garlic, peeled and minced
2 cups diced fresh tomatoes
2 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 (6 ounce) halibut steaks
1/3 cup crumbled feta cheese
DIRECTIONS:
1.Preheat oven to 450 degrees F (230 degrees C). Lightly grease a shallow baking dish.
2.Heat olive oil in a medium saucepan over medium heat and stir in zucchini, onion, and garlic. Cook and stir 5 minutes or until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.
3.Arrange halibut steaks in a single layer in the prepared baking dish. Spoon equal amounts of the zucchini mixture over each steak. Top with feta cheese.
4.Bake 15 minutes in the preheated oven, or until fish is easily flaked with a fork.
