2011 New Year's Cleaning Grand Plan Challenge | Organized Home

For some reason I get really side-tracked when it comes to taking care of my house and doing important things. I am either forgetting to do something, or doing too much at once. I am guessing that I am not the only one. House cleaning has always been something that gets my little heart into a palpitating frenzy. Among other things! With two wild and crazy munchkins and a big secret project burning my fingers up, it seems like time is always of the essence. So, with the help of one of my new favorite websites, I am going to work on getting myself organized.

organizedhome.com -->check it out. It just might change your life. It helped me how to understand filing away all those ridiculous papers that sometimes come in handy--bills, car titles, medical records, etc.

Below is another link to their cleaning challenge. I want a clean house for my family to live in, but if I do not pace myself, I will end up doing it all at once, thereby frustrating not only myself, but also my kids and husband. This challenge has broken down the Spring cleaning into 14 weeks, and I think that is doable. So, I have included the link here for you, cause maybe you are in the same boat as me. I might blog about my efforts, or I might forget to in all the hub-bub, but, at least I am going to have someone else organize my cleaning schedule for me!

Real Simple







One of my favorite magazines and places to find recipes is REAL SIMPLE. They have some great ideas for dinner and they are usually a spin-off from something traditional. Today I am going to post about 3 dinners that we are going to have at our house this week.



Colombian Chicken and Potato Soup: this is a spin-off of corn chowder/potato soup with Latin flare. Everything about this says warm and satisfying.

Spicy Asian Chicken with Brussels Sprouts: This is obviously a new spin to a stir-fry, but brussels sprouts are quite fun to eat, and I have never even thought of sautee-ing them. The ingredients that make up the sauce are used in many asian recipes I have worked with, so if you like to cook asian, buy the ingredients and keep them around!

Sauteed Andouille and Greens with Grits: As far as this recipe goes, I have not done much southern cooking, so I do not know if this is a twist on anything. But, I do love me some collard greens, though just not boiled. I like them sauteed in olive oil with a bit of garlic (okay, make that a lot), and perhaps some of the juice from whatever meat we will be eating it with. Sautee them up a little past bright green and you are laughing.

I am not done there, however. In my cupboard right now I do not have grits but I do have some polenta. So I am going to substitute the polenta for the grits. I checked out the difference between the grits and the polenta, and the main difference is the size of the grain. Grits are more fine, and polenta is a little more course. They should both work great!

Moroccan Chicken Stew


Just thinking about this warms my stomach. Seriously folks, if you are in the mood for a non-traditional comfort food, this is the ticket. Think soft sweet potatoes and stewed chicken literally bursting with flavor with each bite. Take the advice and serve it with couscous and the cilantro. It's a stewy-cinnamony delight. And, my children ate it too! Bam, take that!

Tuesday: Chicken Enchiladas

Sunday: Easy Cheesy Chicken

Stromboli/Calzone Roll Recipe
(compliments of Emily)

1 cup warm water
1 Tbsp yeast
1 tsp salt
1 Tbsp sugar
1 tsp basil
2-3 cups flour
2 Tbsp parm. cheese

Bake @ 375 for 17 minutes

-Brew yeast in warm water.
-Add salt, sugar, basil and 2 cups flour. Knead in parm. cheese, adding more flour as needed.
-Let rise 15-30 minutes.
-Roll out crust to a rectangle, less than 1/2 inch thick.
-Fill with ingredients you like, anything you can put in a warm sandwich.
-Fold ends in first, then sides. Pinch closed. Flip over to bake.

**I've tried and like ham, swiss cheese and broccoli, or pizza sause, cheese, pepperoni and mushrooms**

Gyros

Filling:
1 lb. boneless chicken breast (grilled or sauteed, sliced & seasoned with garlic)
pita bread
2 tomatoes, diced
1 red onion, thinly sliced

Sauce:
1 cup sour cream
1 mediun cucumber, chopped
2 tsp dill weed
1/2 tsp garlic, minced
2 tsp sugar

-Place the sause ingredients in a bowl and mix well. Lightly warm pitas, make pockets, and stuff with chicken, tomatoes and onion. Top with sauce.
